A Thrilling Wednesday.

I am so enthused to write tonight’s blog. It was such a thrilling Wednesday. So many good things happened. And now I’m getting my hair colored, which is a very girl thing for me to say but I LOVE getting my hair colored. I’ll update with my celebrations tonight. I celebrated all three holidays quite well, if I do say so myself.

UPDATE: Today was a three holiday kind of day. I celebrated each one. Trail Mix Day. Eat Outside Day. Love Lawyers Day. And I had a smashingly great day to boot, so good of a day I made a list. And here it is…

1. You know those days when you wake up feeling strangely skinny? I had one of those mornings. It was a good start to the day.

2. I went to get my hair colored today. She did a great job. It’s not exactly as blonde as I wanted it to be, but it’s pretty.

3. Chelsie had a magical perfect interview this morning. Let’s hope that she gets that sweet job!!

4. I wore a fancy outfit to work today. My favorite black shirt and a cute skirt I got at Forever 21 and a red belt and pretty shoes.

5. There are three great holidays for the day.

6. Sean was the sweetest today.

7. I got to talk to my two friends that have been my friends since the 9th grade, Will and Andy. They made me laugh. I miss them.

8. I figured out interesting things on my Excel spreadsheet at work today.

9. Sean called me as I was walking to lunch. I met him at Xoco, a Rick Bayless restaurant (and you know how I feel about Mr. Bayless).

10. I met a guy that loves his job and his iPad.

11. I listened to John Mayer on Spotify today.

12. I had a Diet Coke.

As you can see, I had a happy little day. And I haven’t even gotten to the celebrations! Ok, for the celebrations.

We have a snack table at work. It has lots of treats. It has trail mix! I had some as my after lunch snack. It was delicious, but it had cashews and I loathe cashews. They are one of my least favorite nuts. But it was a celebration nonetheless.

Eat Outside Day and Love Lawyers Day went hand in hand. I got to eat at one of my most favorite places with one of my most favorite people, who happens to be in law school. We ate outside and it was delicious. We split a salad and a sandwich and I couldn’t have been happier.

And actually I ate outside twice today. I had brought my lunch to work, but didn’t eat it. Instead I ate with a cute boy. So before my hair appointment I sat at a table outside of Starbucks on State Street and did some serious people watching while I ate my chicken salad for dinner instead of lunch. It was delightful.

It was one of the greatest Wednesdays. I was so enthused about my completed celebrations.

Frank N. Stein

How hilarious would it be if you knew a guy named Frank N. Stein? It would be the most hilarious! There is a website that you can type your name into and it will tell you how many people in the U.S. have your name. In case you were wondering, there’s only 8 Kate Beards. Naturally, I had to check for Frank Stein.

At least one of them has the middle initial 'N'.

I have never read the original Frankenstein; however, I watched a two hour documentary about it once. Mary Shelley was a crazy person. She was all dark and twisty and not in the endearing Meredith way on Grey’s Anatomy. I mean clearly not in the endearing way. Stories about rebuilt bodies aren’t usually endearing.

Anyway, I’m celebrating today by telling you about what I want to be for Halloween this year. Frankenstein is usually present on Halloween, so I figured this was fitting. The theme of our Halloween this year is 80s music videos. Which means I need the greatest 80s music video outfit. George Michael is making an appearance, maybe more than one. So I have to look awesome.

I’m thinking Madonna. Because she screams 80s and I can wear lace and look awesome. But I secretly want to go as one of the guys from Dexy’s Midnight Runners in the video Come on Eileen. They wear overalls with belts. It’s very fashion forward.

So please please please give me your 80s suggestions. I want this costume to be amazing. I want to win potential contests I might enter. I want to look awesome.

Other Halloween ideas I have/are what I’m going to be in the years to come include, Uncle Sam and the Statue of Liberty, Sloan and Ferris and Cameron. Feel free to add any other future suggestions as well.

Low Sodium, High Awesome

First things first, I don’t watch Dancing with the Stars. However, I have for some reason accidentally caught the cast reveal for Dancing with the Stars for the past THREE years. I have not one time meant to watch it, but somehow I always see it.

It’s More Herbs, Less Salt Day (why I choose these days is beyond me. But celebrate I did. I have to start this day with a story, go figure. Last year at OU my dear sweet friend Jordan and I would go over to our friends Brett, Brian and Kurt’s house for dinner. They would make teriyaki burgers with grilled pineapple on top and Kurt would always make the greatest pasta salad of all time.

I love this pasta salad. So last week I asked him what secret concoction it was so that I could craft it here in Chicago. Turns out its just from a box and I found it at the Jewel down the street. I was thrilled. I made it last night. I ate it for dinner tonight. It’s very tangy and very fantastic. I added lemon juice, because I add lemon juice or lime juice to almost everything I eat. It’s my salt. Anyway, it was full of spiced/herbal goodness.

AND last night I made a large thing of chicken salad. It has and astronomical amount of dill. Mainly because I love dill with my whole heart. It also has cucumbers and grapes. It was fantastic. I had it for lunch today with Wheat Thins. I feel like it’s going to become a staple in my fridge. I also bought cilantro yesterday at the store. Cilantro is my favorite herb.

But I heard that some people have a strange aversion to cilantro. Are you this person? I need to know, what if I invited you to a cilantro dinner at my house and you hated it.
